Ingredients:
4 eggs
250g sugar (lessen if you want)
125g flour
1 tsp baking powder
1/2 tsp salt
3 tbsp melted butter
Icing sugar for dusting
125ml strawberry or raspberry jam
Method:
1. Preheat oven to 180 deg celcius.
2. Beat eggs until bright yellow and thick. Gradually stir in sugar. Sift flour, baking powder and salt, then fold into the egg mixture.
3. Scoop one cup of the egg-flour mixture and fold into the butter. Fold back into the egg-flour mixture.
4. Pour into a baking tray lined with waxed paper.Bake for 20 mins.
5. When cooled, spread jam on the top of the sponge cake and roll tightly. Cut into thin slices and serve.
