Makes 12 chocolate cupcakes. Makes 24 mini muffin cupcakes.
Cupcake pans vary so much in volume. Also sometimes you only need to half fill your tins if you are going to decorate your cupcakes. Another thing is if you use paper cases to line your tins this reduces their volume even further.
I suggest if you want high well rounded cupcakes that you double this recipe and ¾ fill your pans.
Ingredients.
¾ cup plain flour
¼ cup cocoa powder
2 teaspoons baking powder
½ cup caster sugar
80g butter, melted
2 eggs
½ teaspoon vanilla extract
1 tablespoon milk
Baking Temperature
The oven should be preheated to 160oC (325oF)
Method.
-Add all the ingredients to a small mixing bowl.
-Beat on low speed until well blended. Stop and scrape down the sides of the bowl and the beaters.
-Beat on medium speed for two minutes.
-Fill evenly into your chosen cake pans. Aim to half fill them.
-Bake at 160oC for 15-18 minutes.
-Remove from the oven, stand for five minutes then transfer to a wire rack to cool. Cool completely before decorating.
